
Chicken Quesadillas
Chicken quesadillas made with chicken breast, whole-wheat tortillas, onion, bell pepper, and low-fat cheddar cheese are both delicious and healthy because they strike the perfect balance of flavor, nutrition, and comfort.

Ingredients
- 1 Cooking Spray
- 4 oz Chicken Breast
- 1 (8 in.) Whole-Wheat Tortilla
- 2 oz Low-Fat Cheddar Cheese Shredded
- 1 Medium Onion Thinly Sliced Rings
- 1 Medium Bell Pepper Cut Into Strips
Instructions
- Cut chicken into thin strips4 oz Chicken Breast
- Coat a frying pan with cooking spray over medium high heat.1 Cooking Spray
- Add chicken and sauté until thoroughly cooked.4 oz Chicken Breast
- Remove cooked chicken and set aside in a mixing bowl.
- Add pepper and onions to frying pan and cook until soft.1 Medium Onion, 1 Medium Bell Pepper
- Add cooked onions and bell peppers into a mixing bowl with the sauté chicken and set aside.
- Place a tortilla in the frying pan over medium heat.1 (8 in.) Whole-Wheat Tortilla
- Top one-half of the tortilla with the sautéd chicken, onion, and bell pepper mixture.
- Top the second half of the tortilla with the shredded cheese.2 oz Low-Fat Cheddar Cheese
- Fold the tortilla and press down slightly.
- Brown each side of the tortilla.
- Remove quesadilla from frying pan and cut into 2 to 4 wedges.
- Serve immediately.
