Ingredients
  

  • 1 Cooking Spray
  • 4 oz Chicken Breast
  • 1 (8 in.) Whole-Wheat Tortilla
  • 2 oz Low-Fat Cheddar Cheese Shredded
  • 1 Medium Onion Thinly Sliced Rings
  • 1 Medium Bell Pepper Cut Into Strips

Instructions
 

  • Cut chicken into thin strips
    4 oz Chicken Breast
  • Coat a frying pan with cooking spray over medium high heat.
    1 Cooking Spray
  • Add chicken and sauté until thoroughly cooked.
    4 oz Chicken Breast
  • Remove cooked chicken and set aside in a mixing bowl.
  • Add pepper and onions to frying pan and cook until soft.
    1 Medium Onion, 1 Medium Bell Pepper
  • Add cooked onions and bell peppers into a mixing bowl with the sauté chicken and set aside.
  • Place a tortilla in the frying pan over medium heat.
    1 (8 in.) Whole-Wheat Tortilla
  • Top one-half of the tortilla with the sautéd chicken, onion, and bell pepper mixture.
  • Top the second half of the tortilla with the shredded cheese.
    2 oz Low-Fat Cheddar Cheese
  • Fold the tortilla and press down slightly.
  • Brown each side of the tortilla.
  • Remove quesadilla from frying pan and cut into 2 to 4 wedges.
  • Serve immediately.
