Cut chicken into thin strips
4 oz Chicken Breast
Coat a frying pan with cooking spray over medium high heat.

Add chicken and sauté until thoroughly cooked.

Remove cooked chicken and set aside in a mixing bowl.
Add pepper and onions to frying pan and cook until soft.
1 Medium Onion, 1 Medium Bell Pepper
Add cooked onions and bell peppers into a mixing bowl with the sauté chicken and set aside.
Place a tortilla in the frying pan over medium heat.
1 (8 in.) Whole-Wheat Tortilla
Top one-half of the tortilla with the sautéd chicken, onion, and bell pepper mixture.
Top the second half of the tortilla with the shredded cheese.
2 oz Low-Fat Cheddar Cheese
Fold the tortilla and press down slightly.
Brown each side of the tortilla.
Remove quesadilla from frying pan and cut into 2 to 4 wedges.
Serve immediately.
