Pineapple Shrimp Skewers

  • 1 Bamboo Skewers

Ingredients
  

  • 1 lb Medium-Sized Shrimp Uncooked, thaw if frozen
  • 4 Tbsp Reduced-Sodium Soy Sauce
  • 4 Cloves Garlic Minced
  • 1 Tbsp Fresh Ginger Root, or 1 tsp ground ginger Grated
  • 1 Tbsp Brown Sugar
  • 1 Tbsp Vegetable Oil
  • 1 Tsp Red Pepper Flakes
  • 1 Can 20oz Pineapple Chunks Drained, Set Juice Aside
  • 8 Skewers Bamboo Skewers soaked in water for 1 hour

Instructions
 

  • Clean and peel shrimp and set aside.
    1 lb Medium-Sized Shrimp
  • In a bowl, combine soy sauce, garlic, ginger, brown sugar, oil, and red pepper flakes. Stir well to dissolve the sugar.
    4 Tbsp Reduced-Sodium Soy Sauce, 4 Cloves Garlic, 1 Tbsp Fresh Ginger Root, or 1 tsp ground ginger, 1 Tbsp Brown Sugar, 1 Tbsp Vegetable Oil, 1 Tsp Red Pepper Flakes
  • Add 1/2 cup juice from the canned pineapple.
  • In another bowl, pour the soy sauce mixture over the shrimp and pineapple chunks.
  • Cover and allow shrimp to marinate for 30 to 60 minutes.
  • Remove shrimp and pineapple from the soy mixture and thread on skewers, alternating the two ingredients.
    1 Can 20oz Pineapple Chunks, 8 Skewers Bamboo Skewers soaked in water for 1 hour
  • Grill over medium-high heat until the shrimp turn pink.
  • Baste with remaining pineapple juice to keep the shrimp moist.
