
Pineapple Shrimp Skewers
Pineapple and shrimp skewers are a perfect combination of flavor and nutrition—they’re light, satisfying, and packed with sweet-savory goodness.

- 1 Bamboo Skewers
Ingredients
- 1 lb Medium-Sized Shrimp Uncooked, thaw if frozen
- 4 Tbsp Reduced-Sodium Soy Sauce
- 4 Cloves Garlic Minced
- 1 Tbsp Fresh Ginger Root, or 1 tsp ground ginger Grated
- 1 Tbsp Brown Sugar
- 1 Tbsp Vegetable Oil
- 1 Tsp Red Pepper Flakes
- 1 Can 20oz Pineapple Chunks Drained, Set Juice Aside
- 8 Skewers Bamboo Skewers soaked in water for 1 hour
Instructions
- Clean and peel shrimp and set aside.1 lb Medium-Sized Shrimp
- In a bowl, combine soy sauce, garlic, ginger, brown sugar, oil, and red pepper flakes. Stir well to dissolve the sugar.4 Tbsp Reduced-Sodium Soy Sauce, 4 Cloves Garlic, 1 Tbsp Fresh Ginger Root, or 1 tsp ground ginger, 1 Tbsp Brown Sugar, 1 Tbsp Vegetable Oil, 1 Tsp Red Pepper Flakes
- Add 1/2 cup juice from the canned pineapple.
- In another bowl, pour the soy sauce mixture over the shrimp and pineapple chunks.
- Cover and allow shrimp to marinate for 30 to 60 minutes.
- Remove shrimp and pineapple from the soy mixture and thread on skewers, alternating the two ingredients.1 Can 20oz Pineapple Chunks, 8 Skewers Bamboo Skewers soaked in water for 1 hour
- Grill over medium-high heat until the shrimp turn pink.
- Baste with remaining pineapple juice to keep the shrimp moist.
