Turkey Meatballs

Turkey meatballs made with cereal, non-fat Greek yogurt, honey mustard, and onion are both surprisingly healthy and incredibly delicious thanks to their smart ingredient swaps and flavor balance.

  • 2 Large Mixing Bowls
  • 1 Baking Sheet

Ingredients
  

  • 1 lb Ground Turkey
  • 2 Cups Cereal Cheerios, Corn Flakes, or similar, not sweetened.
  • 1/4 Cups Plain Non-Fat Greek Yogurt
  • 2 Tbsp Honey Mustard
  • 2 Tbsp Onion Chopped
  • 1 Tsp Salt add extra to taste
  • 1 Tsp Pepper add extra to taste

Instructions
 

  • Preheat oven to 370°F.
  • Crush cereal in a bowl and set aside.
    2 Cups Cereal
  • In a separate bowl, mix ground turkey, Greek yogurt, honey mustard, chopped onion, salt, pepper, and 1/3 cup crushed cereal.
    1 lb Ground Turkey, 1/4 Cups Plain Non-Fat Greek Yogurt, 2 Tbsp Honey Mustard, 2 Tbsp Onion, 1 Tsp Salt, 1 Tsp Pepper
  • Shape mixture into 16 meatballs.
  • Roll each meatball in the crushed cereal to coat.
  • Place meatballs on a lighly greased baking sheet.
  • Bake for 15 minutes, or until internal temperature reaches 165°F.
  • Serve with veggie sticks for a balanced meal.
